Baked Feta Pasta: A Deliciously Simple Recipe

Ingredients:

  • 200g (7 oz) block of feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 300g (10 oz) pasta of your choice
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste

Directions:

  1. Prepare the Ingredients:
  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, place the block of feta cheese in the center.
  • Surround the feta with cherry tomatoes and drizzle everything with olive oil.
  • Sprinkle minced garlic and red pepper flakes over the tomatoes and cheese. Season with salt and pepper.
  1. Bake the Feta and Tomatoes:
  • Place the baking dish in the preheated oven and bake for 25-30 minutes, until the tomatoes have burst, and the feta is golden and slightly melted.
  1. Cook the Pasta:
  • While the feta and tomatoes are baking, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  1. Assemble the Dish:
  • Remove the baking dish from the oven and use a spoon to mix the softened feta, burst tomatoes, and garlic into a creamy sauce.
  • Add the cooked pasta to the dish, tossing to coat the pasta with the feta and tomato mixture.
  • If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
  1. Finish and Serve:
  • Stir in the fresh basil leaves and season with additional salt and pepper if needed.
  • Serve hot, and enjoy your creamy baked feta pasta!
