- 200g (7 oz) block of feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 300g (10 oz) pasta of your choice
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper, to taste
Directions:
- Prepare the Ingredients:
- Preheat your oven to 400°F (200°C).
- In a large baking dish, place the block of feta cheese in the center.
- Surround the feta with cherry tomatoes and drizzle everything with olive oil.
- Sprinkle minced garlic and red pepper flakes over the tomatoes and cheese. Season with salt and pepper.
- Bake the Feta and Tomatoes:
- Place the baking dish in the preheated oven and bake for 25-30 minutes, until the tomatoes have burst, and the feta is golden and slightly melted.
- Cook the Pasta:
- While the feta and tomatoes are baking, cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- Assemble the Dish:
- Remove the baking dish from the oven and use a spoon to mix the softened feta, burst tomatoes, and garlic into a creamy sauce.
- Add the cooked pasta to the dish, tossing to coat the pasta with the feta and tomato mixture.
- If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
- Finish and Serve:
- Stir in the fresh basil leaves and season with additional salt and pepper if needed.
- Serve hot, and enjoy your creamy baked feta pasta!
