- 2 slices whole-grain bread, toasted
- 1 ripe avocado
- 2 large eggs
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1/4 teaspoon red pepper flakes (optional)
- Fresh herbs (such as chives or parsley) for garnish
Directions:
- Prepare the Eggs:
- Bring a small pot of water to a boil. Carefully lower the eggs into the water and cook for 6-7 minutes for soft-boiled eggs.
- Once cooked, transfer the eggs to a bowl of ice water to cool. After cooling, peel the eggs and set aside.
- Prepare the Avocado Spread:
- While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork, then stir in the lemon juice, salt, and pepper. Adjust seasoning to taste.
- Assemble the Toast:
- Spread the mashed avocado evenly over the toasted bread slices.
- Slice the soft-boiled eggs in half and place them on top of the avocado toast.
- Sprinkle with red pepper flakes, fresh herbs, and additional salt and pepper if desired. Serve immediately.
