Creamy Avocado Toast with Soft-Boiled Egg: Healthy & Tasty Recipes

Ingredients:

  • 2 slices whole-grain bread, toasted
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh herbs (such as chives or parsley) for garnish

Directions:

  1. Prepare the Eggs:
  • Bring a small pot of water to a boil. Carefully lower the eggs into the water and cook for 6-7 minutes for soft-boiled eggs.
  • Once cooked, transfer the eggs to a bowl of ice water to cool. After cooling, peel the eggs and set aside.
  1. Prepare the Avocado Spread:
  • While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  • Mash the avocado with a fork, then stir in the lemon juice, salt, and pepper. Adjust seasoning to taste.
  1. Assemble the Toast:
  • Spread the mashed avocado evenly over the toasted bread slices.
  • Slice the soft-boiled eggs in half and place them on top of the avocado toast.
  • Sprinkle with red pepper flakes, fresh herbs, and additional salt and pepper if desired. Serve immediately.
