Ingredients:
2 tablespoons olive oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups chicken broth
2 cups cooked, shredded chicken
1 cup diced potatoes
1 cup green beans, chopped
1 teaspoon thyme
Salt and pepper, to taste
Directions:
Heat olive oil in a large pot. Add onion, carrots, and celery. Sauté until softened.
Add garlic and cook for another minute.
Pour in chicken broth and bring to a simmer.
Add shredded chicken, potatoes, green beans, and thyme. Cook until vegetables are tender.
Season with salt and pepper to taste. Serve hot.
